To mark the 2023 Fèis Ìle, Bunnahabhain have released this unique single-malt whisky. It’s been matured in casks which once held Canasta – which is a variety of sherry produced by Williams & Humbert. In contrast to most Islay whiskies, this one is unpeated.

Tonight’s dram takes me (virtually) to one of my favorite Islay distilleries, Bunnahabhain. While many of their drams are quite peaty/smoky, they’ve started releasing some fabulous unpeated drams. The Canasta Cask Matured Feis Ile 2023 opens with rich caramel, roasted pecans, dark brown sugar, and vanilla bean, followed by cinnamon, figs, light ginger root, and a hint of fresh oranges, then finally sweet red-delicious apples, cocoa powder, and subtle pipe tobacco smoke. The thick-clingy legs and full mouthfeel deliver a long warming finish that is perfectly balanced. This dram begs for cold nights and warm fires.
