The independently-bottled ‘Darkness’ range undergoes a six-month finishing period in an ex-sherry octave cask. In this case, it’s a fourteen-year-old Dalmore that’s gone into an Oloroso cask. Octave casks offer more surface area relative to the volume of whisky, producing an oaky abundance of complex sweetness in every dram.
