The ‘New Make’ series from Holyrood Distillery has been crafted to showcase what can be done with pot still distiller’s malt, and the effect that different yeasts have on it. In this case, there are two yeasts involved: an M-strain distiller’s yeast, and a US05 brewer’s yeast.
