From the Bimber Distillery in London we have this exceptional malt whisky, the Apogee. It’s been aged for twelve years in oak casks that were used for the distillery’s other expressions. Bimber have made waves with their use of locally-grown barley, and traditional floor-malting – and this expression is an excellent showcase of what they’re about.
