Tonight’s dram takes me (virtually) back to my newly-named favorite distillery in England, The Lakes. Their continued release of superb drams has displaced Cotswolds as my favorite distillery in England. The Whiskymaker's Reserve No.6, which is finished in a combination of Oloroso, PX, and red wine casks, opens with apricots, tart cranberries, dates, and red-delicious apples, followed by vanilla, toasted oak, dark chocolate, and freshly-cracked black peppercorns, then nutmeg, toffee, golden raisins, and spicy ginger, with a bit of clove, grapefruit peel, and licorice in the background. The thick-and-clingy legs and creamy full mouthfeel deliver a highly-complex, flavor-packed, ultra-smooth finish that keeps on tantalizing the tastebuds. This is yet another Pedro Ximénez winner!

Drink slow, drink long, drink a variety, drink often.
