This 2008 Deanston has been treated to a special finish in Pedro Ximénez sherry casks, for a total of thirteen years maturation. It’s a distillery exclusive, offering an abundance of complex fruit and warming spice.

Tonight’s dram takes me (virtually) back to one of my favorite Highland distilleries, Deanston. Their 12-year-old PX Cask (2008) is a distillery exclusive (must purchase at the distillery or directly from a UK merchant – not distributed to US or elsewhere) opens with tart strawberries, golden raisins, caramel, and orange marmalade with bits of orange peel, followed by vanilla, toasted oak, heavy cloves, star anise, and red licorice, then finishing with lingering clove, slightly-burnt light brown sugar, red-turning-to-black licorice, a nibble of dark chocolate, and a truffle-like earthiness. The thick-clingy legs and heavy-cream full mouthfeel delivery a long, chewy finish that continues to deliver the flavor minutes after the sip. Another winner from Deanston, and another winner via PX casks!
Drink slow, drink long, drink a variety, drink often.
