Single Pot Still
Single Pot Still Whiskey is a style of whiskey that's only produced in Ireland - and the difference is all about the barley rather than the still. Whilst Scotch whisky can only be made with malted barley, single pot still whiskey is made with both malted and unmalted, or 'green' barley. Like many things in whisky history, this recipe came about as a way to avoid paying too much tax - but the weighty, cereal and spice character of the whiskey that resulted from it has become one of Ireland's sought-after whiskey styles.
